heat olive oil in a skillet over medium heat cook patties in hot oil until golden and cooked through, 3 to 4 minutes per side.
Alternative cooking method: preheat oven to 425°. Place the salmon patties on an oiled baking sheet. Bake for 15 minutes, turn and continue baking another 5 minutes until golden brown on both sides. Serve hot with lemon slices and tartar sauce.
